Three Chilli Noodles is a recipe that I came up with a couple of days ago when I was craving something really spicy and mouthwateringly good. And with spring in the air, I needed something to blow my sinuses into oblivion. So that’s how this recipe was born. And of course, I had to add some ghee to cool down my senses, too.
1 tbsp grape seed oil
1 cup broccoli, cut into florets
1 small lemon, halved
1 tbsp Ghee
2 tbsp sambal oelek, heaped
2 cups whole wheat spaghetti, cooked
Salt to taste
1/4 cup cilantro, chopped
Saute the broccoli in the grape seed oil till tender but still crisp, squirt with a small squeeze of lemon, stir and remove brocolli from pan. Heat the ghee in the pan over medium high heat and toss in the garlic. Stir fry for a minute and throw in the fresno and seranno peppers. A few minutes of sautéing will slightly brown the peppers, now add the sambal oelek. Give it a quick stir and add the spaghetti, broccoli and salt to taste. Toss to coat the sambal mixture evenly, add a squeeze or two of lemon. Remove the pan from the heat and fold in the chopped cilantro. Pile into serving bowls and serve immediately.

Sambal Oelek is a Malaysian condiment primarily made up of a combination of red peppers. Can be found is most grocery store.

I was first introduced to this spicy, mouthwatering condiment when I first moved to the States, years ago. I remember grocery shopping at a popular international food market in New Jersey when I came across Sambal Oelek, and since then it has been a staple in my pantry. I almost always use it as a condiment, but recently have enjoyed cooking with it too.
