Date and Brown Rice Crispy’s

I was wondering if I could entice you with this recipe for juicy mejdool dates, slowly melted in ghee until thick and syrupy. I toss in some brown rice crispies, dried coconut and a bunch of chopped almonds resulting in a slightly gooey, moist, ghee-ey, crunchy and not overly sweet treat.

My date bars will hit every level of any sweet craving you may have and guess what? It’s not too bad for you. With no refined sugars or flours and made with just a few natural ingredients you will be laughing your way into Valentines day!

Whilst perusing the grocery store aisles lately, I’m sure you’ve been inundated with rows upon rows of gleaming chocolate wrappers hiding there treasures within, and begging to be slipped into your cart to be devoured shamelessly later.

However, you don’t have to feel guilty, especially if it’s a good slab of dark chocolate studded with roasted almonds or a particular power food.  I caved in a couple of days ago and bought some all natural peanut butter cups loaded with chia seeds and they were truly delicious! Actually, I might have one now while I’m blogging away…

If you prefer to make a homemade delight that will please you like no other, please go ahead and try my date and rice crisps recipe!  Your Valentine is sure to be pleased!

Juicy Date and Brown Rice Crispy's

  • Servings: 20 squares
  • Difficulty: easy
  • Print

Ingredients

1/2 cup ghee
20 mejdool dates, seeds removed and chopped
pinch of salt
4 cups brown rice crisps
1/2 cup dry roasted coconut chips
1/2 cup almonds, roughly chopped

To Make

Melt the ghee over medium heat in a large pot.

Carefully tumble in the dates.

Reduce the heat to low and continue stirring.

The dates will gather into a lump. That’s ok, continue stirring gently.

The dates will start melting and you will have a very thick, almost syrupy like mass.

Remove the pot from the stove.

Pour in the brown rice crisps.

Gently stir to combine.

Stir in the coconut chips and chopped almonds being careful not to smash the rice.

Empty the date and rice mixture into a 9 x 14 inches rectangular pan.

Firmly but gently press down the rice treat into the pan.

Leave to cool.

Cut into squares or what ever shape takes your fancy!

Take a bite, close you eyes and relish in the crunchy, ghee-ey goodness! Yum!

  1. Yummy! This is a great idea! I know I would love these, and so would my husband! I used dates to sweeter the raw vegan chocolate cheesecakes I made him for Valentine’s day. Am definitely filing this in my place for recipes I want to try.

  2. What are brown rice crisps? Absolutely I will be making these–they look decadent AND healthy. And I’m so happy that I’m not the only one slipping chocolates into my cart (Trader Joe’s, anyone?) and shamelessly devouring later 😉 Can imagine that the ghee would make it taste darker and nuttier than traditional butter.     • Hey Liz. So brown rice crisps are basically the brown rice version of Rice Krispies. Available at most natural food stores. Just a quick warning, after you’ve made them – hide them, because you will not be able to stop eating them. They’re sooooo good! Yum!
