Crunchy, refreshing and chocfull of protein. I simply can’t get enough of this salad. I’ve literally been shoving tonnes of it down my throat recently, its kinda scary. And to tell you frankly, I really enjoy eating it. It is far from boring!
I just had to share this with you because of its simplicity to make. It has very few ingredients and it’s ready in a jiffy. I usually have some sort of greens on hand, be it spinach, arugula or baby romaine. The green, I however prefer is arugula. The slightly bitter bite it lends to the dish, against the tang of the lemon and the buttery olive oil is a pure match! Adding the salmon for chewiness and the crunchy snap of the cucumbers makes a delicious and juicy combination.
It truly is somewhat addictive, so I do caution you… there is such a thing as having too much good 😉

Refreshing Salmon and Arugula Salad
Ingredients
2 cups arugula, roughly chopped
½ cup of thickly cut pepper smoked salmon, broken into bite size pieces
2 persian cucumbers, roughly sliced
1 tbsp. freshly squeezed lemon
1 tbsp. extra virgin olive oil
a couple of grinds of freshly cracked pepper
Salt to taste
Place the arugula in a bowl and layer with the rest of the ingredients.
Toss the ingredients together, if you like.
Adjust the seasoning to taste.
I love eating my refreshing salad without mixing it. Yum!
