Crunchy Walnut and Carrot Salad

Crunchy Walnut and carrot salad with sweet cherries and juicy pears. All of this crazy goodness enrobed in a simple olive oil vinaigrette.

Crunchy Carrot and Walnut Salad

You will need:

  • 2 large juicing carrots
  • 1 large Bartlett pear
  • 2 tablespoons dried cherries (unsweetened) or raisins
  • 1/2 cup walnuts or pines nuts, toasted and roughly chopped
  • 4 tablespoons olive oil
  • a generous squeeze of lemon
  • salt and pepper to taste

To make the salad:

  • Chop the carrots into matchsticks and dice the pear. Add them to a shallow salad bowl.
  • Throw in the dried cherries or raisins.
  • Sprinkle with the toasted nuts.
  • Whisk the olive oil, lemon juice, salt and cracked pepper together. Pour it over the salad and stir to combine. Alternatively you can add the vinaigrette ingredients in a small jar and shake vigorously to emulsify.

Enjoy the whole salad on it’s own or as a side.
