Spaghetti Squash Sevya

I have no idea why it took me so long to figure this out. I mean, who knew subbing spaghetti squash for vermicelli in Sevya would work. For those of us gluten intolerant peeps, I have to say it’s delicious.

A couple of days back, half way through my lunch of spaghetti squash and meatballs, I was already thinking about dessert. Really, what is a meal without dessert. It doesn’t have to be sugar laden or full of fat. Just a piece of fruit with nut butter would do. But, that was not what I was thinking of then. I wanted a warm bowl of sevya and low and behold the idea came to me. If this delicious vegetable satisfied my craving for spaghetti, why not try making sevya with it. And that’s exactly what I did.

Chocolatey Date Syrup Truffles

Oh my gosh! I can’t tell you how much I’m in love with this heavenly after dinner treat. Actually it’s an any time treat if you ask me, it’s so darn good! And …. sshhhh… Don’t tell anyone there ain’t a speck of cane sugar in here. Yes, you heard me. Seriously there isn’t any sugar and don’t get me wrong, there aren’t any icky artificial sweeteners in it either. It’s pure and clean. Made with date syrup, cocoa chips and grass fed butter. These delightful balls are then rolled in unsweetened cocoa and cocoa nibs.

Chocolaty Almond Cupcakes Dolloped with Bittersweet Ganache

I believe I do owe you an apology for not writing as often as I should.

But … for now… I have to make up for my absence with this absolutely wonderful recipe for a super moist and dense almond chocolate cupcake topped with a creamy and decadent bittersweet chocolate ganache.  If you’re like me, and just cannot wait long enough for the cake too cool down before frosting it, you’re in luck baby.  This is the recipe for you!  I highly recommend you give it a try.  It takes a jiffy to make and bakes up in about 15 mins.

As the cake takes it’s short warm ride in the oven.  You will have already whipped up the chocolate ganache to top it.  And in the time it takes for the cupcakes to cool, you may pour yourself a cuppa and gaze dreamily out the window sniffing in the warm chocolaty aroma emanating throughout your serene little kitchen. I craved something sugary but not cane sugar sweet.  I had an idea, maybe something with a little more depth – a sweet treat with coconut sugar.  Already my mind was swirling and I began tampering about in my kitchen experimenting.  I thought to myself, “Well, if I was to use coconut sugar I might as well make it gluten free AND add ghee as its base.”  A few days later I came up with this recipe.  This revelation happened months ago and I have since, made it umpteen times and it’s practically begged to be showed off.
