Chocolaty Almond Cupcakes Dolloped with Bittersweet Ganache
Ladies and Gentlemen,
I believe I do owe you an apology for not writing as often as I should.
But … for now… I have to make up for my absence with this absolutely wonderful recipe for a super moist and dense almond chocolate cupcake topped with a creamy and decadent bittersweet chocolate ganache. If you’re like me, and just cannot wait long enough for the cake too cool down before frosting it, you’re in luck baby. This is the recipe for you! I highly recommend you give it a try. It takes a jiffy to make and bakes up in about 15 mins.
As the cake takes it’s short warm ride in the oven. You will have already whipped up the chocolate ganache to top it. And in the time it takes for the cupcakes to cool, you may pour yourself a cuppa and gaze dreamily out the window sniffing in the warm chocolaty aroma emanating throughout your serene little kitchen. No Marmalade Orange Pudding Cake – Wow, what a mouthful it is, but such a worthy title! Let me tell you a little secret, there really is not a speck of marmalade in it. Yup you got that right! Although I must say I had to boil an orange for it. This citrusy treat is loaded with the rich, orangey, sticky sweet sensation that a orange marmalade pudding cake would deserve if there ever was one. This cake is unbelievably moist, dense and bursting with fresh citrusy notes.
Who would have thought boiling an orange would be so much fun! First of all, simmering the orange in a huge pot of water was an experience it itself. The beautiful orb of bright orange, simply floated about bouncing ever so gently around the pot as if suspended by some invisible thing. Once a Week Banana Cake
I burst through the garage door into the warmth of the laundry room, simultaneously shrugging off my jacket, tugging off my shoes and dumping my bag in its spot. I stop for a brief moment to toss my coat onto the rack and correct the alignment of my shoes, perpendicular to the door – ok… that’s good. I step into the kitchen and slow down just enough to let the warm sudsy water rid the unseen dirt off my hands, before engulfing them into the plush yellow towel – hey, they deserve luxury too. I yank open the fridge and pull out a stick of butter* from its boxed container and rip off the paper its so carefully encased in. A quick zap, maybe 9 seconds? I craved something sugary but not cane sugar sweet. I had an idea, maybe something with a little more depth – a sweet treat with coconut sugar. Already my mind was swirling and I began tampering about in my kitchen experimenting. I thought to myself, “Well, if I was to use coconut sugar I might as well make it gluten free AND add ghee as its base.” A few days later I came up with this recipe.
